What is thuja?

Thuja, also known as western cedar or white cedar, is a tree found in abundance in Quebec forests and which gives off a very camphor-like aroma. It can also be used in steam baths as a substitute for eucalyptus.

What does thuja taste like?

This highly fragrant plant gives off resinous aromas, but quite different from the scent of fir or spruce trees. Its flavor is very balanced with citrus notes. Slightly sweet, it is used whole to flavor soups or powdered to add to bread and cookie dough. This foliage is a good source of vitamin C, worth trying!
